Well this is my first Blog post! I am excited! This is all new to me, I still have to learn a lot, so for the first blog I decided to post a recipe that I have done not so long ago. It was easy to make and it turned out pretty Delicious!!!
Soups are great way to comfort yourself; I mean just imagine, on a snowy, cold, winter day, you are served a hot bowl of soup. With all the different tastes you sense on your tongue, you feel you are starting to warm up. Plus soups are great way to serve your family veggies for healthy balance. There are lots of interesting and amazing facts about soups, like it helps you manage your weight and stay on track when dieting. Plus it help to intake more of those cups of water that you don’t like to drink.
I was once googling for some soup recipe, and I came up with this soup image, I don’t remember where it was from but it was delicious looking picture. So, I wrote out the recipe, and decided to try it out, (btw I made a few changes to it). You can make this out of fresh corn or if you have few cans of corn that take up space in the cabin, you can use those. Also you can always add any favorite spices and fresh herbs you like.

Ingredients:
1 tsp extra olive oil
1 large onions, chopped
28 oz can of corn kernels
5-7 cups of chicken or vegetable stock
15 oz can of chopped tomatoes
1 tsp of salt
¼ tsp of black pepper
½ cup sour cream
8 springs of fresh dill
Instructions:
1. Heat oil in a pot over med-low &
cook onions till tender about 10-12 min.
2. Stir in corn & cook for 2 min.
3. Add stock & bring to boil
4. Reduce heat and simmer till corn is tender, about 15-20 min.
5. Add tomatoes, salt & pepper, stir & remove from heat
6. Serve in bowl w/dollops of sour cream & dill springs
